Traditional white wine method at controlled temperature, with soft pressing of the grapes.

Ageing

The wine continues to age in tanks, with a 2–3 month period of cold ageing, developing greater harmony and structure.

Winemaking method

Made according to the Martinotti Method and in accordance with the production regulations for Valdobbiadene Prosecco Superiore DOCG. Secondary fermentation takes place in an autoclave at a controlled temperature of approximately 18 °C. After ageing on the lees, the wine is cold-stabilised at -4 °C and microfiltered before bottling.

The elegant heart of our winemaking

Cartizze Brut Valdobbiadene DOCG is our most elegant and contemporary interpretation of Superiore di Cartizze. A dry, refined style created to showcase the distinctive character of this unique terroir. It is produced exclusively in the historic Cartizze area, on the steep hills of Valdobbiadene, where the demanding slopes still require most vineyard work to be carried out by hand.

Soils rich in marl and sandstone, together with a well-ventilated microclimate and significant temperature variations between day and night, allow the Glera grapes to ripen gradually and evenly, preserving their freshness and aromatic complexity. The result is an elegant, harmonious sparkling wine that reflects the distinctive character of Cartizze and our own interpretation of Valdobbiadene DOCG.

Dedicated to Matteo, the founder of our winery, this wine is a tribute to our family roots and to a story that, since 1930, continues to inspire the way we make wine.

Appearance

Brilliant, pale straw yellow in colour, with a fine and persistent perlage.

Nose

Intense and refined, with fruity notes of Williams pear and delicate white flowers, and a citrus finish.

Palate

On the palate, it is creamy and velvety, with a complex minerality imparted by the “salis” – a local Venetian dialect term describing the sandstone present in the soils of Cartizze, known for its distinctive salinity.

Serve at 6-8 °C, in large sparkling wine glasses.

Pairings

Pairs beautifully with raw seafood, seafood risottos and delicate fish dishes. An excellent match for shellfish, oysters and molluscs, it is also perfect as an aperitif.
