Ageing

The wine continues to age in tanks, with a 2–3 month period of cold ageing, developing greater harmony and structure.

Winemaking method

Made according to the Martinotti Method and in accordance with the production regulations for Valdobbiadene Prosecco Superiore DOCG. Secondary fermentation takes place in an autoclave at a controlled temperature of approximately 18 °C. After ageing on the lees, the wine is cold-stabilised at -4 °C and microfiltered before bottling.

Orfeo's legacy

Valdobbiadene DOCG Rive di Santo Stefano comes from one of the most highly regarded areas in the hills of Valdobbiadene, where the steep slopes still require much of the vineyard work to be carried out by hand. In Santo Stefano, favourable exposures and marl- and sandstone-rich soils allow the Glera grapes to ripen slowly and evenly, giving rise to a wine of remarkable finesse, elegance and a distinctive sense of place.

“Orfeo 1969” is dedicated to Orfeo Varaschin, winemaker and third generation of the family. A tribute to his passion, his winemaking sensitivity and the creative vision with which he helped shape the style of our wines. A legacy that lives on in the way we interpret Valdobbiadene today.

Appearance

Brilliant, pale straw yellow in colour, with a fine and persistent perlage and a soft, silky mousse.

Intense and elegant, with notes of rose, white peach and walnut.

Pairings

Orfeo 1969 is ideal with delicate fish dishes and raw seafood, it also pairs beautifully with risottos and dishes featuring seasonal vegetables and early spring produce. An intriguing contrast is created by the richness of pan-seared foie gras.
