Ageing

The wine continues to age in tanks, with a 2–3 month period of cold ageing, developing greater harmony and structure.

Winemaking method

Made according to the Martinotti Method and in accordance with the production regulations for Valdobbiadene Prosecco Superiore DOCG. Secondary fermentation takes place in an autoclave at a controlled temperature of approximately 18 °C. After ageing on the lees, the wine is cold-stabilised at -4 °C and microfiltered before bottling.

Where our journey began

Superiore di Cartizze DOCG comes from the heart of one of the most prestigious areas within the Valdobbiadene DOCG appellation: just 107 hectares nestled among the hills of San Pietro di Barbozza, Santo Stefano and Saccol. Here, the steep slopes still require most vineyard work to be carried out by hand, while the favourable exposure allows the Glera grapes to ripen slowly and evenly.

The ancient marine-origin soils, rich in minerals and naturally well-drained, together with significant temperature variations and constant ventilation, contribute to a wine of elegance and harmony, distinguished by finesse and aromatic complexity.

Cartizze also holds a special place in our family history: it was the wine with which Varaschin first entered the Italian market, becoming over time one of the most representative wines in our portfolio.

Appearance

Brilliant, pale straw yellow in colour, with a fine and persistent perlage.

Nose

Intense and refined, with fruity notes of Williams pear, Golden apple and a mature floral bouquet.

Palate

On the palate, it is creamy and velvety, with a complex minerality imparted by the “salis” – a local Venetian dialect term describing the sandstone present in the soils of Cartizze, known for its distinctive salinity.

Serve at 6-8 °C, in large sparkling wine glasses.

Pairings

Ideal with fish, shellfish and molluscs, it is also perfect as an aperitif. Its softness and balance make it an excellent pairing with dry pastries and delicate cream-based desserts.
