Wine making
Traditional white wine method at controlled temperature, with soft pressing of the grapes. Maceration on the skins for 12 hours at a controlled temperaturure.
Winemaking method
Secondary fermentation takes place statically in the bottle with selected yeasts for approximately 2–3 months, with no disgorgement.
A time honoured tradition
Our Vino Col Fondo is rooted in the winemaking tradition of Veneto and preserves one of the oldest ways of interpreting the region’s sparkling wines: Prosecco “as it once was”.
Made from 100% Glera grapes, it undergoes a natural secondary fermentation in the bottle and remains in contact with its lees, without disgorgement. It is precisely the presence of these lees at the bottom of the bottle that gives “Col Fondo” its name and lends the wine its authentic, distinctive character.

Versatile at the table, it pairs beautifully with selections of cured meats and cheeses, soups, aged cheeses and white meat dishes.
For a different tasting experience, the bottle can be gently turned upside down before serving, bringing the lees back into suspension and enhancing the wine’s more authentic, textural character.
