Ultima Ua Passito is a sweet, complex wine made from carefully selected Glera grapes grown in the vineyards of San Pietro di Barbozza. After being harvested by hand, the grapes are left to dry on racks for approximately six months, slowly concentrating their aromas and sugars.
The grapes are then pressed using a traditional manual press, followed by fermentation in glass demijohns, where the wine rests for one year. It then undergoes a long ageing period of four years in barriques, gradually developing greater structure, depth and aromatic complexity.
Ultima Ua is also a wine for contemplation, to be savoured slowly in order to fully appreciate its richness and complexity. A precious, limited-production wine that deeply reflects the identity of the Varaschin family: the value of patience, artisanal care and knowledge passed down through generations.
